Delicious Homemade Almond Cream Recipe

Nothing brings us back to summer in Sicily as much as homemade almond cream made by our auntie, homemade almond milk made by our grandma and constant granita breakfasts! This almond cream recipe is exactly what she used to make for us and honestly, no store-bought thing can ever top this up!
You know by now, if you have read posts on here, that we love a good spread and cream, from pistachio to hazelnut, we can’t get enough! And it was only time before we actually added this family secret and shared it with you, for good reasons! In the next few weeks, this almond cream will be the main character of other recipes, and I’m excited to show you all the ways you can use it!

What is almond cream?
Almond cream is a delicious nut spread that is very popular in Sicily. Made with Sicilian almonds, butter, milk, sugar and white chocolate. This spread is velvety and very rich in flavour and it’s perfect eaten by the spoon (as we like it most!!), used as a spread, on top of gelato or as a dessert filling.
Almond cream is also widely used in classic french pastry, whether it’s an almond croissant or something similar used for creme frangipane. Nonetheless, this almond cream filling is all made the italian way.
Are almonds good for you?
Almonds are one of the most popular tree nuts and for great reasons! They are nutrient dense, full of antioxidants, minerals, vitamins and healthy fats. And they have plenty of benefits for you like:
- High in vitamin E, magnesium, and manganese
- Contain fiber, protein, and healthy fats
- Can help lower bad cholesterol and maintain good cholesterol
- Rich in antioxidants, which reduce oxidative stress and inflammation.
- The combination of protein, fiber, and healthy fats promotes satiety, reducing overeating.
- Low in carbs, making them suitable for low-carb diets.
- Contain calcium, phosphorus, and magnesium, essential for strong bones and teeth.
- Vitamin E and antioxidants help maintain healthy skin and reduce signs of aging
- Promotes stronger, shinier hair (healthline)
As with everything, eating in moderation is key, as almonds are nutrient-dense, they could bring digestive problems if eaten in excess. For example, an adult is recommended to eat around 30 gr per day, which equals around 23 almonds.
What ingredients are needed to make this almond cream recipe?
You will only need a few ingredients to make this delicious almond spread, and most are likely already in your pantry and fridge. So forget about almond extract, eggs, flour, vanilla extract or almond paste, because this is done with simple ingredients:
- sugar – granulated sugar brings the perfect amount of sweetness to balance the almonds;
- shelled almonds – we used Sicilian almonds, which are sweeter and more flavourful. Whole almonds are the main characters of the recipe;
- white chocolate – adds creaminess and a smooth texture, giving a touch of indulgence to this spread;
- unsalted butter – helps tie all the ingredients together, adding a rich finish;
- milk – just enough to loosen the texture and make it spread better.
How do I make almond cream?
You will start by turning on your Thermomix and placing the sugar inside the jug. Then grind for 20 seconds at speed 7. Add the almonds and grind again for 20 seconds at speed 8. Repeat this step if needed for a finer texture.
Proceed to add the white chocolate and grind again for 20 seconds at speed 8. Then pour in the milk and butter, and mix for 10 minutes at 50°C on speed 3.
Once smooth and ready, transfer the almond cream into a jar. Refrigerate until cold. You can keep this in the fridge for up to 10 days (if it does last that long!).


Can I do almond cream without a Thermomix?
You absolutely can, and that’s the beauty of this cream of almond recipe! So instead of using a Thermomix, you will need a blender and a pot. No stand mixer or hand mixer required.
Blend the sugar and almonds together until you get a fine, sandy texture. You can toast the ground almonds first for extra flavor if you like.
In a small saucepan, gently heat the milk, white chocolate and unsalted butter over low heat until the white chocolate and butter have melted and the mixture is warm (not boiling!).
Pour the warm liquid into the blender and blend everything until smooth and creamy. Scrape down the sides as needed.
Transfer to a jar, let it cool to room temperature, then refrigerate and enjoy your almond cream!
Can I make vegan almond cream using the same recipe?
You can indeed! We have tried our hand at this by swapping butter for vegan butter (margarine won’t work) and using oat milk instead of regular milk (almond milk tends to be too thin), and while it’s a bit more runny than the non-vegan version, it was delicious anyway! You can add a bit more of vegan white chocolate to adjust the texture, too.
There are also a lot of recipes around to make vegan almond cream, calling for almond flour and more, so make sure to check what fits best for you.
What are the almond cream uses?
There are plenty of ways you can enjoy this almond cream for cooking and baking, and just for almond desserts:
- by the spoon – we need to mention the obvious, we love to have this by the spoon, it’s a great pick me up;
- on toast or brioche– this is the perfect nutty spread to start your day with;
- on granita – whether swirled on top or to make a delicious almond granita;
- as a liqueur base – we love to use cream to make liqueur like this pistachio version and this almond cream version;
- filling for pastries or tarts – you can fill any pastry with this and don’t stop just at almond croissants, or frangipane recipe, this would fit well with chocolate and fruit pastries too;
- layered in cakes – think from sponges to mini cakes, or even layered with buttercream, pastry cream or chocolate spreads, this would also be amazing in torta tenerina;
- over fresh fruits – spoon some over berries or macedonia for a quick no fuss dessert;
- on gelato – dream combo with a nutty add-on;
- layered in tiramisu – this would make this classic dessert even more indulgent;
- in cookies – this would be such a great combo swirled on top or as a filling for cookies;
- on pancakes or crêpes – a sweet twist for some irresistible classics;
- in overnight oats, add some Maldon salt on top for a delicious treat.
Do you have more almond recipes?

- swiss almond cake: the softest cake, perfect for tea and as a breakfast treat!


Almond Cream
Ingredients
- 100 g sugar
- 100 g shelled almonds
- 100 g white chocolate
- 100 g milk
- 80 g butter
Instructions
- Place the sugar in the jug of your Thermomix and grind it for 20 seconds at speed 7.
- Add the almonds and grind again for 20 seconds, this time at speed 8. Repeat this process a second time if necessary.
- Add the white chocolate and grind for 20 seconds at speed 8 again.
- Now add the milk and butter and mix for 10 minutes/50C at speed 3.
- Once ready, pour it in a jar and place it in the fridge until cold.
