What is a sgroppino al limone?

Lemon sgroppino is an Italian cocktail-dessert hybrid that dates back to the 16th century. It was invented in Veneto and served to the noble households as a way to reset the palate between courses. Another story says that it originated in the 18th century and that it was used as an end-of-day drink for gondolieri. Overtime, it became a summer favourite all over Italy thanks to its distinctive zesty flavour and texture.

Now it’s traditionally served as a digestivo or as a palate cleanser between courses of an especially long or indulgent meal. The word sgroppino comes from the Venetian dialect word sgropin, meaning ‘to untie’ or ‘loosen the stomach’ – giving an idea of aiding digestion.

Nowadays, you can find versions of sgroppino made with ice cream, making it even creamier. Or versions of it with other sorbets like grapefruit, lime or mandarin. Some also use aromatic herbs like mint, basil or thyme to add an even deeper flavour. And last but not least, even a version of sgroppino limoncello.
