SCRIPPELLE CREPES FROM ABRUZZO

Scrippelle, derived from the Italian word scripp, meaning small pieces of paper, is a dish deeply rooted in Abruzzo’s culinary history. They are thin crepes filled with cheese and served in hot broth.

INGREDIENTS

eggs flour water Pecorino Romano Parmesan Cheese  pancetta  butter Chicken broth or beef broth

Prepare the batter and cook the crepes. Prepare the broth.

Fill the scrippelle and roll them. pour the broth on top & enjoy hot!
